Jalapeño Popper Breakfast Casserole

A cheesy egg casserole with jalapeños and bacon. An easy and delicious way to start the day. Once again the elements of the jalapeño popper show it’s versatility in making any type of dish better!!

Ingredients

  • 12 Eggs
  • 2 large Jalapeños diced
  • 10 strips Bacon cooked and crumbled
  • 2 cup Cheddar Cheese shredded – Divided
  • 8 oz Cream Cheese cubbed

Step 1

Whisk and Mix
Crack eggs into a large bowl and whisk until smooth and aerated, two to three minutes. Stir in jalapeño, cheddar cheese and bacon.

Step 2

Prepare
Preheat oven to 375°
Pour mixture into a prepared
9 x 13 baking dish, evenly place cream cheese cubes in mixture, top with more cheddar cheese.

Step 3

Bake
Bake for 35 to 45 minutes, or until set and cooked through. Remove and rest 20 minutes then slice and serve.
