A very simple pork barbecue rub featuring brown sugar, smoked paprika and cumin. The brown sugar creates a caramelized crust on the meat and is loaded with flavor. This is a great rub for pork as well as chicken.
Ingredients
- 1/4 C Brown Sugar
- 2 Tbs Smoked Paprika
- 2 Tbs Cumin
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Cayenne Pepper
- 1 Tbs Salt
- 2 tsp Pepper
- 3 lbs Pork Chops
Step 1
Make Spice Rub
Thoroughly combine all seasonings in a bowl. (Keep in a tightly sealed container if storing for later use.)
Step 2
Prepare Pork Chops
Make small cuts in the outside fat ring surrounding the loin area of the pork chop in several places. This will prevent the chop from deforming into a cup as it cooks. Liberally season the chops and set aside for 20 minutes.
Step 3
Sear, Cook
Sear the chops four to five minutes per side or until cooked medium. Let rest ten minutes before serving.
