Crispy Cheese Tacos

I was camping at my family’s private campground over memorial day and ended up using my griddle more than my charcoal grill while I was there.

The main reason was this new fascination with dropping shredded cheese directly on the hot surface of the griddle and making crispy cheese disks. I tried cheddar, mozzarella and pepper jack cheese – all worked brilliantly.

It took a number of attempts to get it how I wanted, but what I learned was to start with a light sprinkle of cheese at first – then add more. Let it cook and get crispy for an easy flip. Finally, be prepare to have the doors blown off by some crazy good taco action!

This is a technique more than a recipe. Make any kind of taco with any combo of ingredients, but if the tacos include shredded cheese and soft tortillas – try this.
