Sautéed Apples with Cinnamon over Vanilla Ice Cream

I always have apples, cinnamon, butter and brown sugar in my kitchen, but this is the first time I have specifically set out to use them as a simple topping for ice cream.

The result was frozen summer comfort!

The warm apples and cinnamon with the cold sugary vanilla made me feel like I was a kid in grandma’s backyard enjoying a summer treat. Needless to say, the ease of preparation, nostalgia and sugar fix combined for a treat that I won’t soon forget. This is a must try!

Ingredients

  • 2 Tbs Butter
  • 2 large Apples peeled and diced (Honeycrisp variety used in this recipe)
  • (3 C) 2 Tbs Brown Sugar
  • 1/2 tsp Cinnamon
  • 1 pint Vanilla Ice Cream

DESERT: 4 SERVINGS

Step 1

Soften Apples
Melt butter in a skillet over medium heat, add apples, cover and cook until apples start to soften, four to five minutes, stirring occasionally.

Step 2

Add Sugar and Cinnamon
Mix in brown sugar and cinnamon, cover and cook until apples are soft and caramelized on the surface, stir occasionally, 10 to 12 minutes. Remove from heat and let rest 10 minutes.

Step 3

Scoop and Serve
Scoop Ice cream into a bowl, spoon apples on top of ice cream, then serve.

Are a sweet variety of apple that remains firm and shrinks little when fully cooked and softened. These qualities making them ideal for cooking.
